Easy Mexican Rice

Easy Mexican Rice


  • 2 cups long grain rice made with
  • 2 tablespoons Alchemy Fiber For Rice
  • 1/8 cup oil
  • 8 oz tomato sauce
  • 6 stems cilantro
  • 1 teaspoon salt
  • 1 teaspoon minced garlic
  • 4 cups chicken stock
  • dash cumin
  • dash garlic pepper


  1. Heat oil in a large frying pan on medium heat and add rice cooking until browned.
  2. Add the Alchemy Fiber for Rice and chicken stock to rice and stir until dissolved.
  3. Add tomato sauce, salt, garlic, cumin and garlic pepper to pan.
  4. Stir and cover pan. Let it simmer for 30-40 minutes or until liquid is all absorbed and rice is cooked.
  5. Fluff rice and top with cilantro to serve.
